Outline beats colour every time
The instinct is to fix legibility with colour — white text, then yellow when white gets lost. It does not work, because footage changes underneath the caption while the colour stays fixed. Any colour you pick will collide with some frame.

A dark stroke around light letters gives the text its own edge regardless of what is behind it, so the caption survives a bright sky, a white wall and a busy street without you grading anything. Keeping clear of the interface
Short-form feeds all paint their own UI over your video: a caption and username along the bottom, action buttons up the right side. Text placed in either lands underneath them and is simply not readable in the feed, however good it looked in the editor.
Drag the captions into the middle third of the frame rather than the classic subtitle position at the bottom. It feels wrong if you are used to broadcast convention, and it is correct for vertical short-form — the centre is the only region all three platforms leave alone.

Why do my captions disappear over bright footage?
Because colour alone cannot cover changing footage. Add a thick outline, or use a highlight that changes the background behind the word rather than the word itself — either gives the text its own edge so it survives a bright sky or a busy background without grading the clip.
Where should captions sit for Reels and Shorts?
In the middle third. All three platforms overlay their own interface along the bottom and up the right-hand side, so anything placed there is hidden in the feed even though it looks fine in the editor.
